Cupcakes without sugar!? (and how to get your cupcakes to smell like a five star dessert)

And it wasn’t great. No, I didn’t try to make a no sugar cupcake recipe. I just somehow forgot the sugar.

It all started when I was doing some late-night baking, but I was pressed for time since school’s about to start back up again and my mom had given me a bedtime. I had to be swift, but I wasn’t worried. I got out all the baking ingredients (including the SUGAR) and was baking by a lemonade cupcake recipe.

It was supposed to make mini cupcakes, but I wanted to make them bigger. Thankfully the recipe was supposed to make over 30 cupcakes so I could make about a dozen big cupcakes with no trouble.

I had made lemon extract for the first time and was adding it in. everything smelled amazingly like lemon. In the middle of it I had to go get something from my room and then when I came back, boom. My cookbook was missing. Our kitchen is not very big, so even just me and my mother make a crowd in the kitchen. I looked all over then I finally found it. It said to add cinnamon to the mix so I just went with it, not even noticing until after I was reading the wrong recipe.

You see, the cookbook was little and paperback so I could fold it with ease to one page. Somehow it got turned to the other side and I started to read the recipe next over. I had ended up adding the wrong thing and thus added the wrong thing. I guess that’s what made me forget the sugar since I have no idea what else it could be.

BUT. I now know that lemon extract and cinnamon make a heavenly cupcake smell. Too bad they didn't taste heavenly. They tasted so plain it was gross. They look like bread rolls.

But Hey! Now you know that if you ever want to make your cupcakes smell like your birthday, just add a teensy bit of lemon extract and cinnamon! (and I mean a teensy bit of cinnamon, since cinnamon can easily become domineering over the whole treat.)
